This Chipotle’s inspired rice is the perfect side dish to go with chicken, meat, fish etc. I’m very into cooking with fresh cilantro and lime, so I thought this was the perfect dish!. I personally just served this with flank steak and it was the perfect combination.
I have a love/hate relationship with rice because it is a great healthy side dish that fills you up. On the other hand, it can get pretty boring after awhile. Therefore, this recipe is perfect to change it up. Plus this may be the easiest way to prepare a side dish ever. A total of 20 minutes tops and most of that time it is out of the way and out of mind on the stovetop. Sounds good to me!

Knockoff Chipotle Cilantro Lime Rice
- 1 Cup of Jasmati Rice
- 2 Cups of water
- Juice of 1/2 lime
- 2 tbsp fresh cilantro
- 1 tsp kosher salt
- 1-2 tsp black pepper
- Boil 2 cups of water and pour in rice. Turn the heat to simmer and cover pot. Let sit for 15 minutes.
- While the rice is cooking, juice the 1/2 lime and chop fresh cilantro.
- Once it is done cooking, add lime juice, cilantro, pepper and salt. Mix together and serve.
